Hence, the need to establish the maximum permitted concentrations of ethanol in herbal formulations intended specifically for the pediatric population has already been recognized (Fiocchi et al., 1999). An ethanol-free formulations or formulations with the lowest achievable content of ethanol are preferred in order to avoid or at least reduce exposure and potential negative health effects (Sheskey et al., 2017).

2011, Food ChemistryCitation Excerpt :Studies related with alcohol retention in cooked foods are scarce (USDA Table of Nutrient Retention Factors, 2007). Moreover, additional information is needed when these foods are consumed by the paediatric age group, abstinent alcoholics, or ethanol sensible individuals (Fiocchi, Riva, & Giovamrini, 1999; Vally & Thompson, 2003). Dealcoholised wine presenting low ethanol content can be used as wine substitutes in meals planned for these group individuals, but no studies were found related with absence of ethanol in these cooked meals and influence on sensory characteristics.
